Something a little different for you today, but this is too good not to share.
This is a very customizable recipe so if you see something you don’t like, don’t put it in. Something you really like? Add some more! This salsa is pretty much delicious and this recipe makes a ton so feel free to share with friends or maybe just eat it for lunch, dinner, and an evening snack everyday for a week…It keeps in the fridge for about a week and it does get better with age and the veggies and dressing really start to mix. It’s amazing with tortilla chips, on its own, or in tacos/burritos, and it’s not too bad for ya either!
Can of Mixed Beans
Can of Chopped Tomatoes (I like the kind with added jalapenos and peppers)
Can of Sweet Corn
1 Small Red Onion
Bunch of Fresh Coriander
Juice of 1 Lime
Teaspoon of Salt
1/2 Cup Olive Oil
1/4 Cayenne Pepper
1 Clove Minced Garlic
Place the lime juice, salt, olive oil, cayenne pepper, and minced garlic in a jar and shake to combine (or whisk in a small bowl if you don’t have a jar). Set aside for the time being, in a large container or bowl, mix the beans, chopped tomatoes, diced red onion, sweet corn, and peeled, pitted, chopped avocados. A tip for avocados, cut all the way around the avocado lengthwise and pull apart, then use a large spoon to scoop the avocado out. Use a kitchen scissors to snip in the coriander to the salsa, add the dressing and mix well. Refrigerate and serve with tortilla chips!
