A little bit of a detour from my usual blog content, but it seems that beauty bloggers/readers of beauty blogs are also fans of good food. So here is a recipe for a super simple chocolate pudding cake. This cake is quick and easy to make, doesn’t need many ingredients (one of the reasons I love this is because I usually have the ingredients on hand), and it makes its own chocolate sauce!
You will need:
1 cup all-purpose flour
1 cup sugar
1/4 cup unsweetened cocoa
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
3 tablespoons vegetable oil (I used olive oil and it worked fine)
1 teaspoon vanilla
Mix the flour, sugar, cocoa powder, baking powder, and salt together. Add the milk, oil, and vanilla and mix. It will be a very thick consistency, don’t worry, this is normal! Spoon the batter in an 8 inch square greased baking pan.
In a separate bowl, mix together 1/3 cup of sugar and 2 tablespoons of cocoa powder. Sprinkle this evenly over the batter. Then pour 1 cup of boiling water over the whole thing, do not mix! I know this sounds bizarre, but trust me.
Bake at 177 C (350 F) for about 25-30 minutes. As the cake bakes, a layer of chocolate pudding forms at the bottom with lovely moist chocolate cake layered on top. Remove and serve hot, excellent with vanilla ice cream.
